It depends on why you're learning. They are not so different that if you learned one, you wouldn't understand another. There is no “Latin American” Spanish. Each country has its own dialect. So just choose depending on how you'll be using it. If you're planning on moving to Spain, study Spanish from Spain. If you want to understand what your Colombian friends are saying, study Colombian Spanish. In the end, Spanish is Spanish, and once you know it, you'll pick up the differences when speaking to people from different places. I studied it throughout high school and college with teachers/professors from Spain, Colombia, Venezuela, Chile, Argentina, Honduras, Costa Rica, Mexico, the Dominican Republic…you don't really need to choose. Just learn the basics and go from there.
